So after my little monkey went to bed last night I decided I needed to put our spoiled bananas to good use. I waited so patiently for the muffins to be done... and when the timer finally wen't off I was sooo excited! I ran and grabbed one mitten and pulled those babies out. I think I was a little too excited, and to my dismay this is where the muffins ended up. It was a sad night.
LUCKILYYY I had made two extra loaves I had planned on giving away. In case you're wondering that loaf below was NOT given away & was eaten by me. ;) My husband couldn't fathom having all those muffins go to the trash, so he salvaged a few muffins and ate them right up!
Chocolate Chip Banana Bread:
1 stick butter
11/3 c sugar
2 eggs
1 tsp vanilla
1 c sour cream
2 c flour
1 tsp baking powder
1 tsp baking soda
3/4 tsp salt
1 c mashed bananas
1 c milk chocolate chips
1/2 c chopped pecans (optional - I left these out!)
Cream butter and sugar, add eggs, vanilla and sour cream. Mix flour, baking powder, baking soda, and salt in separate bowl. Slowly add to sugar mixture. Fold in bananas, nuts, and chocolate chips. Pour into 2 loaf pans or 2 muffin pans-or 1 of each. Bake at 325 for 1 hour in a loaf pan or 25 min in a muffin pan.
You can stop right here and this banana bread will already be amazingly delicous!! However if you want it to be even more fattening delicious add this topping:
1/4 c. melted butter
1/2 cup brown sugar
optional:
1/2 cup coconut
1/4 c chopped pecans
Mix ingredients together and sprinkle on bread. Put the oven on broil and put bread in for 1-2 min.Enjoy!!

Hubbies don't care about the 5 second rule! lol I think it could be 5 hours or 5 days and they would still eat it! Glad you enjoyed it, it does sound and look really good!

ReplyDeleteSo this recipe looked so good I searched to find it again because like a dummy I did not book mark the page. Well I found you again and made these with my daughter Went pick up the loaf pan to put in the oven and totally flipped it right on to the floor. Good thing we doubled the recipe so I still had one more to go in the oven. Ever think the recipe is cursed! ha ha Well the remaining loaf came out perfect and we all gobbled it up! Thanks so much for the recipe.

Similar recipe to my banana-chocolate chip-mayonnaise muffins! Which, incidentally, happen to be the best thing I've ever ate. I ate ten in one day... I could feel ym serotonin levels increase just THINKING about them!
