One of my favorite things about Christmas- Twice Baked Potatoes

Every year for Christmas dinner my mom makes a ham and twice baked potatoes. It has to be one of the things I look forward to most. The other night some friends invited us over for dinner, so I volunteered to make twice baked potatoes.  They are a little bit of work, but since I wasn’t making the main dish it wasn’t bad. Seriously though… if you haven’t made these before you MUST try them soon! I know they aren’t super healthy, but… it’s Christmas! And they are delicious… so try them out! And then eat one, or two…

Twice Baked Potatoes!

Ingredients:

5 Baking Potatoes

1/3 cup milk

4 TB butter

1/4 cup sour cream

1/2 t salt

1/2 t pepper

1 c shredded cheese

3 strips of cooked bacon

green onions (optional)

 

Directions:

Prep the potatoes by washing them and then piercing with a fork several times. Bake potatoes at 400 degrees for one hour. Allow potatoes to cool.

Next scoop out all of the potatoes leaving only the skins. Mash potatoes and then mix in butter, milk, sour cream, salt and pepper.

Once the potatoes are mashed scoop the potatoes back into the skins.

If you have a drummer boy helper you may end up with one less skin. lol. However I usually throw out one of the skins anyway because I like lots of potatoes in mine. :)

p.s. Notice the spray paint and chocolate in the background… story of my life. I was using all of my empty jars to fill them with Christmas candy, and those were the remnants.

Next top with cheese and bacon and bake at 375 for 10-15 min or until cheese is bubbly.

Take out of the oven and ENJOY!! Yum! These have to be one of my favorite sides ever! I could just eat these for dinner and be happy! :)

  2. I love twice baked potaotes but i must admit I dont bake them twice. I throw them in the microwave for about 10 minutes first then do the rest. It cuts out a lot of time and actually makes them a quick side dish for supper. I've recently started making them in big batches and freezing them as well it can't get much quicker than that. Like I said I LOVE twice baked potatoes! :)
