German Chocolate Cake!

Thanks everyone for all your sweet Birthday’s wishes! They made my day! Really they did. :)

I had a wonderful birthday! I woke up to breakfast, roses and snuggles from my babies. I also got some alone time to go shopping and get a pedicure. Later that night, I went out to dinner with my family. I was spoiled and it was pure bliss! :)

Oh and check out the cutest birthday present EVER! Isn’t she to die for? I could eat her right up.

Now since we’ve had all this talk about cake I thought I better share a cake recipe. Here’s one of my faves:

German Chocolate Cake

I made this cake for my mom’s birthday about a month ago. Can I just say I LOVE love love the coconut frosting! I could eat it by the spoonful! Literally. Funny story: So after I got done frosting the cake there was extra frosting.  SO of course I put the pan on the counter to SAVE it for later. My sweet husband was trying to help out with the dishes and ALMOST ruined the leftover frosting. I might have done a mad dash to the kitchen to save the frosting. Luckily I did and me and my mom enjoyed every last bite! I know I’m crazy. lol

So anyways… I sort of cheated on the cake. I bought the German Chocolate box cake and threw in a package of pudding to make it a little more moist.  However there is no cheating on the frosting.  That is definitely the best part!

Coconut Pecan Frosting:

From The Lion House Cookbook

Ingredients:

3 egg yolks

1 cup sugar

1 cup evaporated milk

1/2 cup butter or margarine

1 tsp. vanilla

1 1/2 cups flaked coconut (make sure it’s fresh)

1 cup pecans, chopped

Directions:

Combine egg yolks, sugar, milk, butter, and vanilla in a large saucepan. Cook and stir over medium heat until thickened, about 12 minutes ( Make sure to stir consistently for at least 10 min).  Add coconut and pecans. Beat until thick enough to spread.

I made a 2-layer cake and had enough to frost the center and tops.

I added chocolate frosting to the sides, a few pecans to the top and that’s it! It was a pretty simple cake… considering I cheated (A.K.A. had 2 babies to play with). Maybe next time I’ll try Bobby Flays.

I had some extra mix… so I threw a few cupcakes in as well. Much more kid friendly!

YUMMY! If you haven’t had German Chocolate Cake yet, you are missing out. Find an excuse and make it this weekend!

  2. That icing sounds delicious! It probably won't be the same using desiccated coconut, will it?

    One doesn't even need to make a cake with this, just eat it all on it's own...i'd do that, hehe! But those cupcakes looks so cute and yummy!
